I'm in Australia and produce on a largish scale both beef cattle and sheep for mainly wool production and meat. I'm more cattle than sheep, but the sheep always make more money, its just that the sheep are more labor intensive to run. More of a life style choice for me, I could employ more labor and make more money by running more sheep but its easier to lean more towards the beef side of things and keep it smaller and simpler.

Even though the cattle may return less profit per pound per year, I think it's great for your soil to have some beeves on pasture with your lambs. Just as diversity in crop species is better for your soil and provide different nutrients and pest control for your flock, a diverse animal population is also great for your soil. You aren't a sheep farmer, you are a grass/clover farmer. I'm sure you are familiar with Gabe Brown who is super smart on the subject. Congratulations on your book! Yeah for a lot of people having cattle is just an ego thing which is kind of stupid if you ask me, but if you genuinely have a VERY LARGE amount of land cattle can be more profitable than sheep depending on the area because of the huge market for beef.

Sheep will destroy your pastors, cattle will help you rebuild your grass lands

Can you talk about where these prices are being picked from? Maybe I did it wrong but the price for selling in ranges dramatically depending on the area. I wanted to say Texas was WAY higher than my area.

Have you considered pigs to include in your rotation? They are very easy keepers, and probably more profitable than the beef. Each sow will give you two litters per year, and idk what the average is but my sow consistently has 9 piglets/litter that then sell for $120+/piglet.

Sheep grow faster, need less to grow, can eat more range of food sources. And world wide far more people eat sheep than beef , means larger consumer base.
I'd also look at free range turkey and guinea fowl. They grow faster and need whole lot less that cows or sheep. Larger birds can defend themselves more than chickens to have them outside not in a building.
