New subscriber here after the second video I've watched! OMG the details your dad adds to his instructions are a game changer. If it's fundamental to the process he shares it, regardless how minute. It's like he is teaching me personally rather than performing for the camera.

Lmao. I liked to use chicken stock instead of water to cook my rice for the fried rice dish but now I just used chicken bouillon in the frying process instead and its much more tastier 😂.

I do the same stuff. My preference is frying boiling veg for 5 minutes in fire stove instead of microwave. I do almost everything same. I add pepper in the end as I love pepper flavour. Turns too good.

Maybe remove the females from the middle of this video. A masterclass indeed this is. I would of course need a translator and a lot of patience tableside to take in what this well-seasoned professional is saying but anyone trying to learn everything he is teaching can do without an 2 infants and 2 women who care nothing of what he is saying. Do the babysitting off camera.
Nothing wrong with thinking or typing that. The title of the video isn't subtitled 'Watch me talk to infants'. Thank you.

I use Basmati rice only for fried rice and make it in the microwave comes out spot on every time. I found that most rice cookers don't give the same result trust me on this one I have been cooking Asian for more than 50 years you must use a ceramic pot with lid also I don't use cold rice out of fridge it's BS if I have seafood in the rice I always put it back in the pot with sesame oil in the bottom and chopped spring onions on the top rice will absorb more flavor. place a diffusor on top of stove with low heat after 10 minutes purfecto. 🐊

I also add fish sauce to the egg. It tastes so good with the fried rice. Just 1 tsp for every 2 eggs.

washing the rice- i think it depends on the rice. so supermarket rice like parboiled is usually washed and then enriched with vitamins and minerals. washing it again removes these nutrient coatings.

If you use chopsticks in the video, the rice cooker will soon become unusable. Don't use chopsticks。视频里用筷子,那个老虎电饭煲锅会好快不能用。不要用筷子插。🤣

History suggests that the creation of fried rice by the Chinese came from the need to save unfinished rice in the pot and avoid wasting of food. So it makes sense that day-old rice is used for fried rice. That being said, if you do not have day-old rice and you are badly craving for fried rice, I guess you can simply cook rice first and at least let it cool down before using it for fried rice. Otherwise, eat bibimbap instead.

Just made it tonight. Super easy recipe to follow and it came out perfect. I think adding a protein to it would be amazing, probably chicken since chicken stock was used.

Searching around 10 years for that elusive secret the restaurant’s use, I’ve asked 3 different Chinese restaurant workers about it and have watched DOZENS of tutorials including master chefs and iron chef. I’ve bought an enamelled cast iron pan because someone said fried rice needs high heat. I have half of a pantry shelf full of Chinese vinegars, soys, cooking wines and that’s excluding the spices.

I was actually fixing on getting a job with a restaurant. I’m a solo mum of 4 young kids, so my time commitments are already wild, but after everything I’ve learnt, there was always something wrong and it wasn’t wok hei.

I added prawns and spring onions, THIS recipe finally I have found it. Thank you to you and Papa Lau!! ❤ God bless
