The white stuff on your salmon is albumin. It is protein. It is found in all salmon. When you see it, that is due to things like a high heat cook (such as grilling) or due to a well done salmon. If you either only use a slower/lower heat to cook it or don’t cook to well done then you won’t see the albumin. But know that it is simply protein and it is always there. It isn’t harmful. ❤
