Pretty cool upgrade! You're discovering food processing machines design standards on your own haha.

Best thing you can do to make a food processing machine more hygienic is to make all surfaces that are in contact with food from a non-corrosive material such as stainless steel, lowering the number of bolts and fasteners/using welding instead and minimizing voids where food can accumulate. There's more info on standards in the U.S. 21 CFR Part 110 and EHEDG Guidelines DOC 8 if you're interested. I think they're available free online.

That’s bad ass! One thing I recommend is to build a notch or add slide outs to the hopper with a pop pin to lock in place. That way you eliminate the Allen screws for swapping out rollers. 👍

Good work buddy,
I made a hand cranked one out of wood with just the rollers in steel. I find it very difficult to set the gap, I hand cut the knurl, it makes better flour than rolled oats. I have to get it out and try it again.

Working a lot better than the original, nice job. I used to have a knurling tool, but a couple weeks of antibiotics cleared it right up
