Thank you for this....I am a chef and I was introduced to Soto ayam in Bali. This recipe had nostalgia, flavors and textures to boot. I tend to under cook the eggs to soft whilst letting the broth finish the eggs and absorb the flavors. Sheer glamour. So glad you use chicken breast because legs,skin etc will make the soup fat, greasy that you see a lot in Soto Ayam. Its suppose to be a fresh soup. Lovely complexity with white pepper and coriander often forgotten in western style Soto Ayam .
