Never will happen,The moon not really made out of soil to grow things,Made out of rock and dust,If Im wrong,Like to see it to beleive it,No chance of reform the moon to another Earth like planet,That wont happen

A minor correction: the van Allen belt is not the name of the magnetic fields around Earth.
A major correction: objects in the ISS experience far more gravity than objects on the Moon. The "weightlessness" or "microgravity" is caused by the continually changing direction vector as it orbits Earth.

The answer is hundreds of varieties of seed to sprout, or to grow micro-greens, or to grow in pots, or to use in hydroponics. The Astronauts would not lack in variety of flavor, nutritional value, or ease of use. Also, essential would be herbs and spices by the ton, bouillon flavorings, and finally mushrooms. Raising fish, chicken, goats using fodder to feed them along with black fly, crickets, and earthworms should be rather straight forward. These things simply need to go there first, of course after a habitat is established, and be setup to be self sustaining and immediately useful through the use of robotics.

This activity should be underground. Without an atmosphere, meteorites strike the moon's surface intact and at high speed. The system would need sufficient protection against such a strike which would be difficult above ground.

But things are different on the moon, there is some gravity that can pull water down on the plants in a habitat. Plus you can add to the soil to make it useful for plants.

Mushrooms are more suitable for space growing. They DON'T NEED light or a lot of other things that plants need .

So it’s possible they could grow certain plants…But clearly would need to be in bullet (mini meteor) proof greenhouses, with LEDs, to provide optimum light and an oxygenated atmosphere that keeps a tolerable temperature?

To become "soil" the regolith needs to have the same or similar fungal mitochondria and bacteria found in our Earth based soils. The material is dead until it is given these.

Soil is not necessary for growing plants. The much bigger problem is the lack of carbon dioxide and nitrogen. Hydroponic greenhouses grow massive amounts of food with no soil, but they spend a lot of money just to blow fresh air over the plants to help them get more CO2 and grow faster.
