ОтветитьLooks like a terrific recipe but it seems hard to believe with as little meat on the bone of the average wing they could tolerate 425 degrees for an hour. One would think they'd be done in 25 minutes.

ОтветитьIngredients for 4 portions:
2 1/2 pounds chicken wing sections
1 tbsp kosher salt
1 tsp freshly ground black pepper
1 tsp smoked paprika
2 tbsp baking powder (aluminum free)
- Coat wings, and bake at 425 F., turning every 15-20 minutes, until they are browned and crispy. Total cooking time will be about 1 hour, but that depends on the size and temperature of your wings.
For the Honey Sriracha glaze:
1/3 cup honey
1/3 cup Sriracha
1 tbsp seasoned rice vinegar
1/4 tsp sesame oil
sesame seeds to garnish

ОтветитьFound them to be way over cooked and dry. To hot an oven. Try 375 they become juicy yet cooked.
ОтветитьVery simple recipe and the baking soda trick really does work. But for me, the spice rub had too much kosher salt. Next time I'll cut that in half; a full tablespoon was too much and it overpowered the other ingredients. It's probably not needed with the sriracha sauce.

ОтветитьWait…..55 minutes???? 55 minutes to cook chicken wings? Am I losing my mind? Did I hear that right? 20 minutes plus 20 minutes plus 15 minutes is just under an hour. That’s how long it takes to cook the ENTIRE chicken.
I totally must have missed something. I’ll go watch it again. I think I’m just used to frying them which takes less than 10 minutes so perhaps o heard wrong

Ответитьafter doing this recipe a few times, still, be sparing with the baking powder. 2 tablespoons is way too god damn much for most wings, but please try it for yourself if you don't believe me lol. if you do 2 tbs the batch should be even bigger than the one here

ОтветитьMade these tonight. I didn't achieve much crispiness (maybe I should've cooked longer) but they still were amazing. Nice and juicy meat and really flavorful! Chef John RULES! I taught myself to cook during the Pandemic by watching his videos.
Ответитьso some years back when I still haven't figured out the difference between baking soda and baking powder, I made a roasted chicken that's supposed to be crispy using baking powder...
Except of course I used baking soda and, sure it's crispy enough but the skin is f-king bitter.
What about a recipe for broiling wings?
