I have not always agreed or ended up with similar results; however, I have always better understood coffee as a result. I have been waiting to hear about your experience along with your knowledge of the roasting process, so improvements can also be made with roasting. I am a home roaster currently using an SR800. I am having fantastic results with it. The roasting videos will only improve what happens with the coffee in our household. 😊

ОтветитьI went to roaster that everyone was raving about. I tried the coffee and it smelt like ammonia! Everyone thougt I was crazy but it was so strong to me I couldnt drink it.

ОтветитьI roast coffee at home using a Fresh Roast SR800. I am trying various green coffee seeds from around the world in an attempt to find the bean that produces a flavor I like using a consistent roast profile. The beans are all roasted in the same way: cooling down 30 sec after first crack. The key words are "a flavor I like" which means this process is woefully SUBJECTIVE! What may please me for a cup of coffee someone else may determine to be completely disgusting! Further confusing this is the brew method: the flavor profile for an espresso will be completely different than that of a pour-over. Too many variables! I don't know how coffee roasters avoid losing their minds.

Could you please some day make a video about Portuguese coffee, and the bica in particular ? Portuguese roasting is mostly unknown though to many its specific profile produces one of the greatest coffee in the world, making Lisbon to them the coffee capital instead of Rome, and the bica an espresso killer.

ОтветитьHi James! Just out of curiosity, I think you missed out on another type of coffee "roasting" from a certain region (South East Asia). It is slightly similar to your "Deep Fried Coffee" video but it is an actual coffee bean prep method. But they actually fry it in butter and then roast it if I'm not mistaken giving it a certain profile that is more buttery. Notable types are Vietnamese coffee or Ipoh White Coffee. Not sure if you have tried it before but you should totally give it a go and make a video of it. Personally not that big of a fan of it xD

If I were a home roaster, and wanted to roast coffee just for my consumption, let's say a pot or two at a time in a cast iron skillet, what are the key targets? Time and temperature? Color and popping? I prefer a medium roast coffee. I like your comment on origin. That makes sense. Lastly, I hope you smile at my signature. Skillet

ОтветитьI roast in a wok using a fine whisk to constantly stir them. It takes about 20 minutes and you get arm ache! It's tempting to stop stirring to give your arm a rest but you definitely get better results if you continue to stir. A swap arms every couple of minutes! 😅

ОтветитьNow I learned why I didn't like coffee a lot growing up. I love acidic coffee. Sweet and acidic. But majority of your bargain bin coffee and what you find in machines is tuned for bitterness and don't use light roasts

Ответитьi have a friend who has a roasting biz and he has a decent quality drum roaster. meanwhile, i use a hacked hot air popcorn popper, which bounces the beans while roasting them(small quantities at a time) and blows off the chaff as well, and i would say the results are comparable.
ОтветитьI think i am gonna give up the darker roasts now – i always picked the darkest (idk why), but i woulf rather have that nuance and increased polyphenol count; i get that it all depends, etc. But i like any coffee and would rather reap the benefits and nuance.
