I made your instant pot version of the birria tacos and was blown away (whole family was too)… I will try this as well.

I do have a question.

Because I usually make this for a large crowd, do you have any pointers for doing things ahead of time? I once made them fresh, they turned out great! but when I tried to make leftovers, the corn tortillas stuck to the pan and fell apart… I am trying to understand why.

My objective is to make batches of the sauce, beef, consumé ahead of time. So I only have to pan fry them the day of.
