Hey Josh, I know it's been a while since you posted this but I wanted to ask for clarification regarding the sugar measurement. You say to add 2 tsp (9g) of sugar, but for other spices, 3 tsp is 9g. Is this because sugar has a different density/weight? I'll be trying this very soon, thank you for sharing this recipe!

Dairy product prices had shot up here in the Philippines but I wanted to try cooking one of these. I do wonder if I can sacrifice the yogurt or the heavy cream (I may transition to all purpose cream if I find heavy cream too expensive)

Maybe I should switch heavy cream with coconut milk since it's less expensive and readily available fresh here in the Philippines?

1 cup of yogurt already costs ₱100 ($2) here. Sucks to be in a reverse golden age.

I just tried indian food for the 1st time: Tika Masala, Chicken Pandoori, Goat 🐐, simossas, and a 1 Mango Lassie with the garlic 🧄 bread. Omg this was so good. I have alway been a Chinese food fan well not anymore.

This is why I have been learning to cook my favorite dishes. I love what I like and can eat it numerous times so I can't afford $15-20 per serving. Making big batches at home for $2 per serving is preferred, and I can stuff myself numerous times over the week!

Joshua Weissman's Chicken Tikka Masala (Printable Version)

In a large bowl put 240 grams of full fat yogurt, 2 teaspoons or 6 grams of kosher salt, 1 1/4 tablespoon or 11 grams of Garam Masala.

Cut two pounds or 900 grams of boneless and skinless chicken thighs.

Mix all that together With the mixture in the bowl and allow to sit for 10 minutes at room temp but ideally overnight in the fridge.

In a medium to large deep sided skillet add just enough vegetable oil to coat the bottom of a pan.

Heat over medium high until nearly smoking then add all your chicken in batches and sear for two to three minutes per side so you get some nice Browning.

Once everything's seared remove all your chicken add a touch more oil if needed.

Lower the heat to medium.

Add a mix of 1 large yellow onion sliced, 1 two inch nub of Ginger thinly sliced, and 3 cloves of garlic also thinly sliced.

Season lightly with salt to draw the water out.

Saute for three to five minutes or until all the vegetables are softened.

Then add in 1 teaspoon or 3 grams of paprika, 1 teaspoon or 3 grams of cayenne powder, 1 tablespoon or 9 grams of Garam Masala, 2 teaspoons or 9 grams of granulated sugar, and 1 teaspoon or 3 grams of ground cumin.

Saute until really fragrant.

Add a 15 ounce or 425 gram can of crushed tomatoes.

Stir that together and let it reduce for five minutes.

Pour all that into a blender and blend on high speed until as smooth as physically possible then place it back into the pan.

Bring it back to a simmer reduce the heat to low and add all of your cooked chicken.

Simmer stirring occasionally for 10 minutes.

Stir in one cup or 240 milliliters of heavy whipping cream and reduce for seven to eight more minutes stirring occasionally or until thickened.


Ingredients:

ive watched Joshua for a while off and on, but found this recipe when looking for stuff i can cook for my dad who has to minimize/eliminate salt. so i made this without adding any salt, just the little that was in the tomatos and in the yogurt. very minimal. and it was so dang good i couldnt believe it. will definitely add it to my list of things to cook
