I grow them for the flowers only. I honestly can't cope with the digestive fall out! 😮 I think some people react very badly...I'm one of them.

Before I started doing no-dig, I ran through my Jerusalem artichoke patch with my rototiller. I now have them all over my garden, and will never lack for this food source. They're quite tasty either raw or cooked.

Fartichokes! There are five ways to take care of the gas issue. They are packed full of a soluble fiber called Inulin. Inulin passes through the stomach and should pass through the small gut without being digested, then into the large gut where natural gut bacteria is supposed to break down the fiber. In today's diet, rich in sugars, preservatives and processed fats, the bacteria that should stay in the large gut migrate up into the small gut along with some bad bacteria where they cause inflammation and several gut ailments. When the Inulin is digested in the small gut by the wrong bacteria, a copious amount of gas can be made. Here's how to deal with it by converting the Inulin into Fructose;
1) Freezing, in the ground if your winters are cold enough or in your freezer. A tip if you shred any for potato pancakes, hash browns or latkes, 'chokes are much wetter than potatoes and should have most of the moisture pressed out before freezing. Large chunks freeze and thaw much better.
2) Fermenting, just like sauerkraut, Kimchi, refrigerator pickles, etc.
3) Cooking for around an hour. Half an hour may be enough for some people.
4) Cooking or soaking with an acidic ingredient such as vinegar or citric acid.
5) Getting your gut bacteria balanced by getting the bad and the good bacteria out of your small gut and improving your large gut bacteria which will get your guts healthy. Then, of course, keeping your guts healthy which is quite the trick on our 'modern' diet. Regular 'doses' of Inulin can help with that.

I didn’t plant them. I did compost some kitchen scraps and they went to town in my garden. Now I have them in 4 places. Oh yea I do love the sound of that snap.

Thanks for this. I live in USA and recently rediscovered gardening as something to do instead of smoking tobacco, while im quitting. This is my first season and I know i got started late, so I've been looking for something to more crops that are hardy against frost. Ill be planting sun choke soon, now.

After explaining no dig techniquesand sharing some of your videos to my landlord, hes given me even more of the property to grow on.

What is best time to grow these artichokes? For example when the growing season is over in august and September can I put them in one of my raised beds will it work? Will I get some decent harvest out of it upto Xmas? I love the taste of these artichokes I world love to grow these and store these for winter.

You can cook then with epazote i cook my beans with epazote a tradition that lots of mexicans still carry on epazote is also great for teas for gas issues and digestion problems or for better digestion..i put it in my soups and many dishes tamales as well lol❤

Im wondering about the cooking part of these knobbly ones.. if it would work out to roast them in oven and then process them through a food mill to get rid of the peels 🤔🤔 i ve got a problem with the texture of the peel, it just doesnt sit well with my autistic food preferences 😹

2015 i received a few of these chokes from a friend. Since that i ve moved twice. But i still have those same chokes going on in my garden 😅 its a miracle 😂 mainly because i ve had extremely hard times due to health problems and my garden projects have often been left to fend themselves 😛 but now it seems health has improved much and probably my garden will also start to flourish 😎

I suppose one would want to harvest them after the first frost & not earlier. For sweetness. So, how do you prevent them from toppling over completely, thus exposing the tubers prematurely on windy days? It can be quite windy where I am; even the fences shake some days.

So...Jerusalem artichoke....not an artichoke, and named Jerusalem not because it was anywhere native to the area but cause someone didn't understand "girasole" which is "sunflower" in italian ...gotcha :)

I grow these in my orchard mainly as super easy fodder to feed treat my chickens, goats & horses. I just cut some leafy stems & flowers as treats throughout Summer (my animals eat every bit! Stems too) It’s just a bonus my family gets the tubers in winter =) We grow sunflowers for feed too, same thing… every animal loves it, no waste. If you have the space, Sunchokes are fodder gold for livestock to get through late Summer when fields get bare.

Thanks so much for your kind expose on sunchokes ...if only every vegetable was this easy to grow with a bountiful harvest! I've found that since they are so plentiful, to shorten cleaning time, I just do a thick peeling of them - this way I don't inadvertently bite a stone in a crevice! I live a simple lifestyle and am so grateful for the veggies that are available during that hungry gap. BTW they can be roasted too with olive oil, garlic, carrots and any other root veggies you have. And at this time kale starts regrowing and then there is enough for dinner :). Thank again Charles! PS I don't put the cuttings in my regular compost bin or they would regrow- just toss them in a separate pile out of the way.

I started growing some last year and I love them roasted! For soup, the taste is too smokey for me, but they roast to a crispy buttery thing in the oven. Saw the first sprouting again in my container, so will get my first free harvest this year 😊

Jerusalem artichokes are fantastic! My problem is to find a varietet that is growing fast because of my location close to the Arctic circle. There is one but it is hard to get so I have put some unknown in the one bed. They grow and I get some to harvest if the summer has been good. I have to harvest them in spring for getting maximum growth but that is ok. But if I am doing it to late the larvas eat them, I have to harvest exactly when the ground frost leaves the ground. This summer I hope I have time to relocate them to a sunnier place, they need it but there is so much to do when having a lot of new projects in the garden. But one get more energy now when we finally can say that spring has arrived! Hopefully our 80-90 cm of snow melt fast!

I love growing Jerusalem artichokes too but always find that cleaning them is a drag… I’m curious about why you choose the less knobbly tubers to replant. Do you find that they produce less knobbly “offspring” tubers?

I read that you can make refrigerator pickles of sunchokes, and of beetroot, too. I've never made either, but the beetroot, at least, keeps only about one month which perhaps could reduce the duration of the hungry gap? (In case it's a North American term, "refrigerator pickle" means the food is neither hot water processed, nor pressure-canned. It's simply put into a brine or pickle solution, and allowed to sit for at least a week and in the case of the Jerusalem artichokes changing out the brine for a new, fresh batch of brine.
Probably not something you want to try to live on exclusively for at least three weeks to a month, but it could add one more food item to the hungry gap arsenal.

When can you harvest them? Are they still edible after they've sprouted? Can you harvest them at any time in the year? I have some growing in my yard, but I have trouble figuring out when it the right time to harvest. And whether you can harvest them for eating outside of the "best" time.

We just had a storm and as I was praising the Lord for not only shielding us but also our animals and allowing around 2/3 of my seedlings to make it through that as well… I remembered a comment I made on your channel some years ago where I said my seedlings wash away with the storms and you replied something implying that it was something new to you. What I was completely ignorant to at the time is that y’all don’t even get tornadoes. What a big world.

I have an old variety found by my 100 year old house in Ontario
It's long and easy to clean about 20cm long and 5cm thick or so
