If the chest are full with trade, is a random Trade will still come?

My game crashes when I get to the last trade!!!!!

So, I created a villager and now I can't build anything in the chunk I spawned him in.
Example: I build something in the chunk the villager was spawned, I leave the world and then everything I built in this chunk has disappeared.
Has anyone else experienced that problem?
