Swiss Cheese Pie - Cheese Festival 1956
1 unbaked 9-inch pie shell
6 slices bacon, fried crisp and crumbled
1-1/2 cups shredded Swiss cheese
3 eggs
1 cup cream, scalded
1/2 cup milk, scalded
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon Wocestershire sauce
Prepare pie crust in pie plate and chill. Beat eggs well. Add the cream
and milk slowly, then add seasonings. Distribute the crumbled bacon
and shredded cheese evenly on bottom of pie shell. Pour egg and milk
mixture over cheese and bacon. Bake in a preheated 400° oven for 10
minutes, then reduce heat to 300° and bake for about 30 minutes. The
pie is done when a silver knife inserted in the center comes out clean.
Allow the pie to stand 5-10 minutes before cutting to serve. Enjoy this
treat often!
