ОтветитьMarc, what's your opinion on cutting the crust off of the bread? Most katsu sando I remember having in Japan had them squared off.
Also - very curious, have you eaten at Butagumi in Tokyo? I head it described as the best tonkatsu in the world, a "museum of pork," and very badly wanted to go on my last trip as it was down the street from my hotel, but it was closed! Was so disappointed... Next time...
