Emily is better than Lorenzo. She knows what she is doing but chooses to cook simpler, nothing wrong with that. Lorenzo, while also doing nothing wrong, really just has to "be different" with dishes that just don't need it and gets jaded about using simpler methods. I think that's a bad cook in my nobody opinion but you don't see Frank dissing on any style of cooking.

ОтветитьI'm a cook at a fancy-schmancy Italian/Pizza restaurant and pretty much everything Frank talked about when describing his Bolognese I immediately thought "oh hey, we did that too"

ОтветитьNon-Italians should not teach how to cook Italian food.... I mean I'm sure all are better than most American attempts at Italian food, but you should probably just call it something else. I feel like the biggest mistake is trying to make it more complicated than it should be.

No, you're not...................
All of them added the garlic too early, immediately after the onions. I fry the mirepoix for quite a time, the garlic does absolutely not belong in there at this time. It will get so bitter. You let the mirepoix stick to the pan and deglaze multiple times to get the roasting flavors. Garlic would simply burn in this process. Please add the garlic after the tomato comes in.

ОтветитьPersonally I’d rate Emily and Lorenzo as Level 1 (with subtypes of mother and poseur,) and Frank as a Level 2. Frank is great but I don’t rate him as expert for this challenge.
