Ответитьi was good till you started adding all those powdered, premixed things. what's in them...? i'm guessing salt, onion garlic powder, paprika, cayenne, maybe cumin and oregano, msg, black pepper...come on people, make your own or break it down for us. i'll never buy any of those expensive premixes. i consider it a major cheat and a crutch

ОтветитьFYI, to all the haters. In New Orleans style Gumbo, they use tomatoes and Okra. There are just as many Gumbo recipes as there are cooks. No one makes it the same. Not even relatives. So chill out.

ОтветитьCreoles use tomatoes and okra depending on the household. Those are negotiable. Some of the other stuff y’all be putting in gumbo are absolutely non negotiable lol

ОтветитьRoux is using heated oil to suspend and roast flour particles, period. Learn to simply bake dry flour and save the countless calories, stirring once every 15 minutes in the oven, maybe. I make extra and vacuum freeze it. Think MUCH faster gumbo. Tip is to pull the flour at milk chocolate color, significantly darkening later in the stew. All my gumbos this way now for years, never going back.

ОтветитьYes to Okra. I never complain about anyone's Gumbo recipe. It varies from person to person. I think it is more creole with tomatoes, but seen it every way.

ОтветитьNo two people do it exactly the same, and I don’t imagine they all did it the same 100 years ago either. This is pretty close to how I do mine- with okra and tomatoes (more of both). I would never purée the trinity. I didn’t see any garlic; always garlic. I’d skip the chicken and add 1 1/2 lb of shrimp. Seasonings look good- have my own blend. All in all, one of the better recipes on yt.
PS: I have the exact same Dutch oven, same color too!
I have just seen your gumbo recipe and immediately went to buy the ingredients. I followed your instructions and it turned out amazing. I am German and love the creole cuisine except that slimy Okra. I've lived in the South since 1988 and still do not eat or cook with Okra. And what's about the chicken complaints? I thought Gumbo was a type of soup where anything in the kitchen is a Go? And now, some haters complain about tomatoes, too? Instead of Okra, I add at least 1.5 pds of mushrooms ... bring it on.
I cook my Gumbo the way I like it, not by some swamp recipe of the early 1900s. Sorry folks and please leave "Mr Make it Happen" do his magic.
Yummy. When I make gumbo I have to make 2 pots. One with okra which I love and a few other people and the other pot without okra cause 2 of my kids don't like the okra. Yes they are weird people lol. Your Roux color is right on point. I'm getting hungry just looking at your footage. I'm from the South so a little kick of spicy is good.

ОтветитьBRO!!!....THANK YOU! I only recently "re-found" found my enjoyment of cooking and being from Louisiana, I LOVE gumbo. Each time I tried a homemade version I would burn my roux.....every time. I never thought to mix the ingredients before the heat...but was also trying to use an olive oil. Just the 7 minutes ALONE made me a subscriber.....THANK YOU!

ОтветитьLots of ignorant comments. He's making a creole gumbo, not a Cajun gumbo. Creole gumbo has tomatoes and okra. Cajun gumbo does not.
