How do you unstake?

I must be the most dull person of all time...I am still so confused because when you restake your stETH for ETH its still 1:1 so where DID CAN I REDEEM REWARDS..? I do not get it.

StETH, wStETH, staking through 3rd party. It's just all more complicated and risky than it should be. What would have been wrong about doing this using the Cardano staking approach?
