ОтветитьI have never liked pancakes, for all the reasons you listed. But this one thick, crisp, buttery pan cake is what the recipe is meant to be. Amazing!
ОтветитьThis reminds me of an Austrian dish called Kaiserschmarren. I grew up with that. After you make your fat pancake, you brake it up into chunks and continue browning the pieces a little. We used to add cinnamon sugar and fruit compote.

ОтветитьI appreciate Mandy's unapologetic drive to make fiddly recipes. Homemade frozen blueberries. Check. Caramel. Check. Re-freezing the blueberris and caramel. Check. Reduced balsamic syrup. Check. A specific diameter for the pan. Check. Steaming and then frying a pancake. Check. Service while the pancake is still warm and the blueberis are cold. Check. "If you want nice things, then this is how it's done."

- honey -> maple syrup
- buttermilk -> soy milk + lemon juice (1tbsp per cup of milk), mix well, let sit at room temp for 10m until thick/curdled
- egg -> aquafaba (and possibly a little baking soda & vinegar)
- butter -> vegan butter
