Like the wood chips, the water pan is a key flavor component for an electric smoker. As the water heats up, the steam not only helps to tenderize the meat but it also flavors the meat. For that reason, I like to add various aromatic ingredients to the water pan. For today's smoked spare ribs, I added orange peel and garlic to the water. Other ingredients such as beer, soda, wine and apple juice work well too! That what makes smokers so great....playing with various flavor profiles! This is the Brinkmann electric smoker. It is one of the best and most affordable electric smokers on the market. It is great because it doesn't require gas or charcoal and uses electricity as the heat source. It is less expensive to operate because of this and maintains a consistent smoking temperature.
