My guess is that it's called white in comparison to the other darker ketchups. You could use it in a white sauce without adding much colour.

For what it's worth - at the supermarket the other day I came across bottles of a brand of Japanese sauces on sale. I bought bottles of "Worcestershire Sauce", "Katsu Sauce" and "Takoyaki Sauce", took them home and tried them all. They're all more or less the same - the Katsu and Takoyaki sauces were essentially thicker Worcestershire sauce. They all work as dipping sauces for the likes of hash browns, croquettes and vegetable fritters.

In an experiment I tried a mushroom ketchup recipe from a circa 1938 collection of home recipes. The final result was quite similar to Worcestershire sauce. Slightly salty an very thin. Probably should have reduced the mixture to get more body, but the sauce wasn’t bad on beef and pork.

Huh, had no idea Ketchup had such a history behind it. Seems like Heinz was very good at his job making his brand synonymous with ketchup as we know it today to the point there's practically no other kind of ketchup except the ones made with tomato.

When I was in Indonesia the ketchup was a ubiquitous condiment at restaurants that was like a sugary-syrupy soy sauce. Don't think there was any fermented fish in it.

Here in indonesia we still use the term “kecap”. The weird part is that ut can reffer to a lot of thing from fish sauce, soy sauce, or even Worcestershire sauce
