I actually said, “ I’ve died and gone to heaven” while eating this meal!
Candied Sweet Potatoes
Place 4 long skinny sweet potatoes, peeled and cut into 1/2 inch slices in baking pan.
Pour the following over sweet potatoes slices in pan:
4 Tbs. Melted butter
1 1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
Pinch of nutmeg
Pinch of ground cloves
Pinch of paprika
2 Tbs. brown sugar
1 Tbs. maple syrup
1/2 cup pecans chopped (or a bit more)
1 tsp dried thyme sprinkled over top
Bake covered at 400° for 35-45 minutes
Honey Garlic glazed Salmon
Sauce ingredients:
(For 8 salmon filets)
4 tbs. Melted butter
2 tsp oil (I use olive oil)
1/4 cup honey (or a bit less)
10-12 garlic cloves (2 bulbs)
6 Tbs. Soy sauce
Juice of one squeezed lemon
2 Tbs. Orange juice (I use organic)
1 Tbs. Apple cider vinegar
1/2 tsp pepper
1 tsp salt
1 tsp paprika
1/4 to 1/2 tsp cayenne pepper (depending on how spicy you prefer it)
2 Tbs. Corn starch.
Bring all ingredients to a boil and simmer for a few minutes.
Pour sauce over salmon filets in a baking pan.
Broil on LOW BROIL for 8-10 minutes. Watch constantly as to mot burn sauce and filets. If filets are super thick, turn heat to 425 after broil time and bake for another 5-10 minutes.
(If filets are thin, broil time of 8-10 minutes is enough.)
Garnish with ground pepper
Serve together with white rice garnished with dried parsley
