Veganuary - day 16: Vietnamese-inspired Rice Rolls (Bánh Cuốn Chay)
This is day 16 of Veganuary. This month, I will share my vegan (mostly) Vietnamese recipes and show you how vegan food is simply delicious food.
With all the rice paper hacks out there, this is my favorite hack. It is also why I’ve shared it repeatedly every year since 2021. To make this even more of a hack, I like to microwave the rice rolls for 2 minutes instead of steaming it (although steaming will result in a slightly softer texture).
