After watching many episodes it's clear Mark is a Jack of all Trades Master of None. Chef and kitchen staff are great.

He gets worse by the episode, the producers of the show must have been tipped off he was worth watching because he was slowly descendng into madness & chaos. His lunatic snobbery is appalling...he thinks people are posh just because they're from Surrey? I feel so sorry for his staff..he must have been a nightmare to work for! The destruction of all those fillet steaks was heartbreaking to watch!

The staff members smoking up 15 cigarettes per day, are doing that during working time. 15 times 10 minutes means they steal around 2,5 hours per day from their employer. They are abusing the kindness of the owner. In my former company you had to compensate that lost time. Both the incompetent sorry excuse for a reservation manager and the criminal Christian (he spent jail time), should pay Mark thousands of pounds for stolen time. And I would sack the chef as well for leaving the kitchen at ten o'clock. He obviously does not know his place.

At the holiday park that christian defrauded he was told not to go over £13,500 which he didnt.
