I have the Sabians. Since they are pretty much just for practicing, I opted for the stainless steel since it will last a lot longer. Pretty happy with them, and am planning on getting more of them for my set. I think you summed up the differences well; I feel like the Zildjians sound a little tastier, but the Sabians meet my needs better.

I’ve got Zildjian sound decent I think the Sabian sound better

Sabian are far more durable and not much louder. To reduce some of the harsh overtones you can use moongel. It does wonders on the ride.
