Im so glad you mentioned the paper towels not being ideal for draining. Its literally my pet peeve. Actuality makes the chicken soggy. A wire mesh or even a steel colander are much better options. The circulating air leeps the chicken crisp and excess oil is drained in a way it csn be reused.

ОтветитьWhy does the fried chicken come out dark brown rather than golden/light brown? I cooked my chicken at 325 for 7 and even 12 min and it still darkens fast. I have changed the oil as well as tried pure all purpose flour with cornstarch and get the same results. Any help would be appreciated!

ОтветитьWhich is it, crispy or crunchy? The title says crispy but you said really good fried chicken has a crunchy exterior but there’s an extremely big difference between crispy and crunchy. Really good fried chicken has a crispy exterior not crunchy. If it’s crunchy that just means you used way to much flour or whatever you use to make the exterior. Perfect fried chicken should have the crispy texture and consistency of potato chips but just a little bit more thicker.

ОтветитьFantastic. Best fried chicken I've ever made. However, I'm not sure how theirs cooked in 7-10 minutes. Ours took 25 minutes at 350 in a deep fryer.
