A fish filet knife I found is best for skinning. I use a milwaukee saw for the bones. I always keep a 8" fixed blade on me while hunting though, a Condor boar dagger.

I'm 54, started w a buck folder and a K Bar. All my hunting and war was done w the K Bar. Now carry the Gerber Light Infantry for everything and Leatherman.

My grandfather was a blacksmith and he made and gave me a knife when I was 6, I’m 14 and that knife is still my edc

One thing I might mention as a hunter who has gone out hunting in the PAC West Cougars, not as much of a problem as they are in the Midwest. However, they're still and ever present danger to hunters here in PAC West. Also we're not necessarily known for friendly gun laws and a lot of the youth here that are legally able to hunt general rifle with a rifle, because of stupid state rulings from the legislature or Department of Fish and Game to them it's okay an unsupervised minor goes out with a 24in barreled 30cal rifle but heaven forbid not with a pistol even if supervised by a parental guardian that is participating in the same recreational activity as their kid, because and I quote the rationale from one of my state house reps "It's too unsafe." 🙄

personally my family has always taken a butchering kit when hunting. this includes an axe, two butchers knives, two skinning knives, a steel and a shovel.
the knives are sharpened before we leave.
we take a ute with 2 refrigerated eskies on board.
the shovel is to bury anything we can't use.

Chefs do NOT use a rod to sharpen a knife. It’s used to realign the edge. It does not remove metal. You should know this.

pull through sharpeners are the best for hunting because they don't get clogged up with gore and they are fast. once you get home then you use the real sharpeners.

In my opinion, Hunters should be fixed blade made of D-2, no need to carry a sharpener. Sharpen once every 2-3 animal harvests for extreme edge sharpness and longevity. No reason to carry extra blades, no reason to leave spent blades in the field, lots of guys don't pack them out. Quality over current fade.

I am from a generation that came out of our mother's womb holding a Buck 110. But my advice would be any pointy three and a half to four inch edc knife will work just fine. Basically the knife you already own. I would say the most/more important thing is your ability to get that knife really sharp and be able to quickly re- sharpen it to hair shaving in the field. It's amazing to me how dull of a knife many folks I've seen will try to use for this purpose. When complete clean wipe dry oil and then wipe down with the same oil shammy you use on your rifle, because when it comes to the salts and iron inside an animal there is no such thing as stainless steel.

A bowie is clumsy, you'll need a little skill for smaller projects. For me, it's the only knife to bring. Have you ever been chased by a cougar or a bear? Bigger is better.

This is like one of those “reality vs. social media” posts lol. People have been skinning animals for years with rocks, it’s amazing how the most basic things become more practical than super technical steels or items.
