Anyone who promotes any other method is a fraud. A knife needs to be sharp but equally important is a durable edge, this technique will accomplish both.

ОтветитьIf you're fine with a decently sharp knife, you don't have to do that many strokes or that slowly, just do the movements shown in the first 33 seconds a few times and test it on your clothes or something, if it does a bit of damage, you're good to go, but if you want a razor edge, go ahead with the rest of the video, as it doesn't hurt (unless you do it wrong) do have a sharper knife

A short and concise video is always preferable to a long confusing one.
As for the process of sharpening itself, about the movement of the hands more specifically, I am a promoter of sharpening a blade in segments - something like heel, belly, tip (not necesarelly in that order) because sharpening from tip to heel (or from heel to tip) requires a more tiresome attention at keeping the blade closer to the starting angle. Twisting, bending, curling, rotating arms require more effort than pushing and pulling arms.
Also, the pressure should be applied on the blade when the blade is not scraping the stone.

The usual 30-minute plus tutorials are good - once you've actually given it a go, and want to dive deeper into the subject - but a bit too much for an enthusiast, who just wants to get an edge on their knife and get on with cooking.

ОтветитьIsn't this the exact opposite way to sharpen the knife? If the edge is pointing away from you, you should be applying pressure when moving the knife towards you, not when moving it forward. At least that's what I've seen in many other videos..

ОтветитьYou shouldn't submerge stones over 3000, it will cause them to crack or degrade - they only need to be splashed. Stones under 3000 can be soaked for up to 15 minutes.

ОтветитьI haven't had any success using my whetstones so far, even after following several tutorials. My knife was so blunt after an hour of sharpening with the stones, tomatoes just laughed at it. This method looks much easier than the other methods I've tried though, so I'll give a try next time.
If I still suck at it, then guess I'm back to using a pull through sharpener instead.
