Where is the REAL Farmers League?

How was Spain never considered a farmers league in the early 2000s because the league was mostly between Barcelona and real Madrid. At least in England at the time there was united Chelsea arsenal and sometimes Liverpool fighting for the league

Celtic and Rangers dominate the league every year, with this year being Celtic who haven't lost a single match and have only drawn once against, you guessed it, Rangers. Celtic are literally leading the league by 9 points with a goal difference of 60. And then, below Rangers (61 points) who are obviously second place, is Hearts, with 42 points. A whole 19 points difference.
Then, when the two Glaswegian teams inevitably get into the Champion's league group stages, they always, and I mean ALWAYS finish dead last in their respective groups. Rangers are dead last with a GD of -20 anda grand total of 0 points. Celtic are dead last with 2 points and a GD of -11

I have to say, that despite the Eredivisie (Netherlands league), has alot of competition between primarily the top 4 clubs with some of the clubs right below that still giving some great results per season. Ajax kind of basically always dominated that top 4. With the rare year where Feyenoord, PSV or even AZ maybe stuck out. Up until like this season, where Ajax is going to shambles in realtime as I'm typing this. But I still think it kind of at least partially qualifies for the ONE horse race term.

I think you misunderstand what the word farming refers to in when used in that context. It's a term used in video games to refer to a player's safe and predictable accumulation of points/rewards/items in a repetitive gameplay loop, applicable to football in terms of farming league points and trophies. There are no surprises when farming, just simple repetition and accumulation.
