When you hit round two in that pan I was like... Whats he going to deglaze that with? Hope he doesn't leave that flavor behind. Then I saw that coconut milk in the lower left of the video. As soon as you dumped it in and started scrapping... Like Pavlov's Dog, my tastebuds lit up. I've never been so jealous of coconut milk in my life. I saw it change color and I could taste all that goodness through the screen! Tell Mom this is another dish she could use one of those mailbox zucchinis in :). PEEAAAAAAACCCCE! You know what... WAIT! Can we talk nutrition for a bit. Yes, this dish may be higher in fat from the coconut but this dish is also LOADED with iron, calcium, vitamin C, B vitamins, magnesium, and those chickpeas have 39 grams of protein per cup. We haven't even touched on the value of the turmeric and ginger! Microbiome... The American Gut Study suggests eating more than 30 different types of plant foods a week for a healthy / diverse microbiome. All ingredients in (including spices) this dish contained 15! I've been working towards being totally plant based and don't like those recipies that try to be meat. I just want good tasting vegan food! That being said, if I get an unstoppable craving for a nostalgic dish that has meat in it, I'm just going to make it with meat.
This showed up as a suggested video. I’m glad I clicked on it. Not vegan or vegetarian. But have been trying to eat more plant based for health reasons. I just made this and it’s pretty good 😊. This meal is definitely Daniel Fast friendly as well. Will be trying the sweet potato and black bean stew next. Thank you for the recipes! Blessings!

ОтветитьI don't know what you know about inflammatory bowel problems, but is the term FODMAP familiar to you? You don't eat onions, cabbages, peas or legumes if you have notable IBD problems. They all are FODMAP ingredients and will give you hard time when digested.
I for example have diverticulosis and if I digest FODMAP ingredients I feel it. There are some exceptions and giving up meat helped, but onions for example occasionally hurt like hell if not used with caution.
The conclusion here is that the dish you made was far from being anti-inflammatory. Maybe next time actually dive deeper to the world of anti-inflammatory foods.

ОтветитьI recently started eating more vegan for my partner and I absolutely love how well this dish comes together on cam, I'm definitely trying it for the two of us! Although I may use more shallots for round 1 with the chickpeas just to give them a bit more flavor and get some nice browned shallots too.
