Can the dough be saved to be cook the next day or does it have to be cooked the same day?

If I make the dough balls the night before should I refrigerate it or is it ok to leave at room temp overnight to cook in the morning?

I plan to make these for my nephew's graduation. I was wondering if I can roll the dough into balls a day ahead then place them on my counter at room temperature then boil them the next day??
