I take onion skins bake them until they're crispy & dry, grind into powder, use to add into soups etc for taste. You can also grill garlic, squeeze the cloves out & add to soups etc for taste.

I was raised to put the peels and skins of onions and a few other veggies on your white coals in the bbq. Let the initial smoke burn off and it adds tremendous flavor to your meat. Or just sit them in a foil packet on the rack.

Onions do not have peel. They have layers. This is particularly true of red ones.

I boil onion skins and use the liquid as a natural dye for wool and fabrics.
I don't even need a mordant to fix the dye but you can use white vinegar if you wish.

People often warn against adding onion peels to your compost heap.
This is mainly because onions, garlic, etc can repel or kill earthworms. If you're not making worm compost and have other composting methods, don't worry. Also, in small quantities earthworms don't mind dry onion peels, just make sure these aren't the main ingredient in your compost
