This traditional Rice & Peas is a favorite in the Caribbean, Pigeon Peas also known as Gungo Peas makes the perfect pot of Rice & Peas
**Ingredients**
1 1/2 Cups or 14 oz Fresh Green Pigeon Peas or 1-2 cans. (The ones in the can is already cooked)
2 cups coconut milk (Can, Cream or powder)
3 cups rice (any Rice of your choice)
Scallion & Thyme
1 Whole pepper
Salt to taste
1 tbsp sugar (optional)
All purpose seasoning for flavor
1 tbsp butter or margarine (optional)
*1 & 1/2 cups of liguid for every 1 cup of rice ratio
*Steam rice on very low heat as cooking too quickly will cause the pot to dry out and the rice will still be uncook
If Rice is uncook after the water dries out, add a bit more water cover with aluminum foil and allow to steam some more
