Everyone's adding their trivia tidbits, I'll add the two I know.

1. Camelot actually wasn't just a model! The castles you see are all different views from a genuine castle they got permission to use gently, and the sword marks from the fight scene against The French are still in the stone walls today.

2. Graham Chapman was, unfortunately, quite sauced during much of the movie, and the bridge of death scene was really nerve-wracking for everyone on set who thought for sure he'd fall.
*He didn't btw. He was fine if memory serves, but I believe I recall that, ironically, someone else did slip a bit causing quite a scare.

So, some of the weird things explained about the movie:

-The police arresting them at the end is a running Monty Python gag from Flying Circus. A lot of their sketches abruptly ended with the police arresting everyone for being “too silly”

- The black screen at the end is a relic of its theatrical run. Since all the credits are at the beginning, the black screen and music are at the end for when they turn up the theatre lights and everyone leaves.

I have been to the Castle with the French, when you go in they offer you some coconuts so you can gallop your way around like they did in Monty Python. Doune Castle, they also filmed Game of Thrones there.

The film is not what it purports to be.
The film about King Arthur is a film within a film. It's a filmed theatrical depiction.
The historian was supposed to comment on the history and the story, but a rider flashes by and kills him, unbeknownst to the people still making the King Arthur film. It's supposed to be 'real life'.
The actual Monty Python budget wouldn't stretch to having horses, so they added the pretense of horse-riding and the coconuts and just went with it. And actually, it set a distinction between the Arthurian actors and the historian's murderer: the murderer is the only person riding a real horse. The actors arrested at the end had nothing to do with the murder.

The monks chanting and smacking themselves in the head are a comic extension of the Middle Ages' flagellates; some sects of Catholic monks would travel town to town chanting and whipping themselves, inflicting pain in solidarity and entreaty to the Lord. For this service, they received food and alms from the inhabitants they met. (Eh; it's a living.)

The row of butts with horns basting from their rears is relevant to the Arthurian time period depicted. Monasteries made money in pre-printing press periods hand-writing manuscripts. It was dull and tedious work, so many monks made their little jokes in less important books by drawing silly stuff in the margins; animals in religious garb, rude jokes, and the like. I suspect the butts were a single illustration taken from a historical manuscript and multiplied as a row.
Here's the additional funny thing: in the UK, 'trump' is a verb and a noun; it translates to 'fart'. So when these butts 'trumpet', they are farting.

The characters in this film and people with the same central Monty Python members.
-Graham Chapman multiplies his roles the least, appearing as 'Arthur' and the silent goofy guard in the prince's castle room.
-John Cleese is the black knight who loses his appendages, the townsperson who was turned into a newt, the rude French castle guard, the wedding-murder knight, Tim the sorcerer, etc, and on and on.
-Eric Idle was Sir Robin, the 'Bring out yer dead" guy, one of the witch accusers, the shrubbery merchant, and others. He's the one who wrote "Spamalot", songs and all. he does a lot of film and voice-animation work, has written a lot of the best-known Monty Python songs ("The Lumberjack Song", "The Sit on My Face March", "The Galaxy Song", "Always Look on the Bright Side of Life", etc). He once performed/filmed "The Galaxy Song" with Stephen Hawking. You should watch Idle in "The Ruttles".
-Michael Palin is less noticable, but actually played the most roles, most apparent as the King marrying his son to a princess with "huge...tracts of land", and as Sir Galahad at Castle Anthrax, but in many other minor roles as well.
-Terry Jones was Sir Bedivere (who taught the villagers witch detection), played the pale prince not wanting to marry, and several other characters. Jones was actually quite interested in and knowledgeable about the Middle Ages, and would go on to write several books on the subject.
-Terry Gilliam was the one lone American in this troupe of otherwise all English members. Mostly, Gilliam did the animations in Monty Python's TV series, but in this film he appears as 'Patsy', the aged questioner at the bridge, and the animator having the heart attack, amongst other roles. This is the same Terry Gilliam who went on to write and direct "Time Bandits", "Baron Munchausen", "Brazil", "The Fisher King", "12 Monkeys", "Fear and Loathing in Las Vegas", and "The Brothers Grimm", among others.

Oh, and after a miserable period of time filming this movie in cold and wet Scotland, the group ran out of money, leading to the foundation of just cutting the ending, letting it just drop. The added bonus was that it's funny.

The whole film had a budget of 40.000 Pounds. They couldn't afford horses...
You have to see the Monty Python docu how this was made. Too good...
Best fun fact after the Holy Gral: Python fan and former Beatle George Harrison gave them money for "The Life of Brian" - saying "I want to see that film". Without it, Life of Brian probably would never had been filmed.
