ОтветитьMy humble opinion: if you involve chopped up fruits in the second fermentation, the booch tastes like utter garbage. Just two pinches of sugar and a teabag with peach flavor or lemon ginger does the job just fine. You can leave the teabag in for the whole 2. fermentation. Tastes a 1000 times better than fermented fruits and your kitchen stays clean.

ОтветитьWhen you pronounce kombucha. There is no accent on “bu”. in Japanese you don’t accent separate syllables, they are all spoken at the same level. You are saying two words kombu and cha. Cha is Japanese for Tea, like chai (used in Turkey). In Japanese, the word "kombu" (昆布) refers to a type of edible kelp that is widely used in Japanese cuisine. It is often used as a flavoring agent and a source of umami in soups, broths, and other dishes. Kombu is also known for its nutritional value, as it is a good source of iodine, dietary fiber, and minerals. In addition to its culinary uses, kombu has also been traditionally used in Japanese folk medicine for its purported health benefits. So you’re basically saying: Kombu tea. Kombu cha. There is no reason to accent the syllable “bu” unless Americans insist on looking stupid in the world today. The Japanese will appreciate that you are making some effort to pronounce things correctly. Or just call it kombu tea!

Personally I do like Noma: make a 1:1 simple syrup, bring to a boil, add the tea off heat, steep 10 mins and then add the rest of roomtemp water.
Why not use Earl Grey? I enjoy the flavours it brings to the booch.

I also have some mix with green tea with chamomile that I bought in India. Should I use only plain tea?? I also have the traditional tea used to prepare chai (I suppose plain black tea). Thank you!

After I unveiled the jar the color of the tea wasn't so yellow as yours. Mine was a light brown. Where do you think I messed up? Is it too much black tea? Is it too much sugar? I should let it sit for 14 days? Thank you.
