These are such a great way to avoid the burger buns! So you can modify slightly for a keto / low carb burger, or paleo too.

I caramelised onions with balsamic vinegar (and I cooked it all in ghee to make it richer!). Then fried mushrooms until they’re nicely caramelised too whilst frying the bacon.

An important tip is to also salt your tomatoes well for half an hour as it will draw out the extra water and intensify your tomato flavour. Big difference!

After cooking the burger it’s time to assemble it - I added Mayo and ketchup to mine, along with a lot of conichons - small french pickles.

It’s super simple and you can tweak it to your tastes or dietary needs.
