I cannot believe a bunch of cooks would talk as if they've never had annoying customers who don't understand what they're asking for. I hate customer service due to these people who should just stay home and cook for themselves, if you defend bad customers then you probably are one yourself.

I really love the idea of food and what’s available in the area. To me a 200 year old recipe is amazing because the reasoning behind the meals is often different,

there’s usual foods made out of desire for specific ingredients like: sugar meat,

or things like the availability of potatoes/tomatoes/chicken allows for these variations as time and accessibility rise. You go from things like lobsters being the everyday food of commoners to the expensive possibly no longer hunted as frequently animal today(if the upcoming Maine legislation on lobster traps passes to promote whale populations). It’s amazing to think of the foods existence as an arch of availability like bananas/broccoli have a pretty crazy route, but it’s interesting to imagine things like Oreos and with how quick and ever changing they are how they’re used as an ingredient in things like frozen deserts/cheesecakes/etc how long they will continue to last. (And Ik there were cookies prior to Oreos that were practically the same they’re part of the cookies timeline) but it’s just wild to me to think of how extensive food is in years I guess

I am sad that the chefs didn't understand the 200 year old hint at the British ruling india for 200 years.
