As a Indian the only European cuisine i enjoy is italian cuisine because of so many vegetarian italian options and italian really know how to use cheese and dairy properly... Even my mother enjoy dishes like cherry tomato pasta and many like that..

not sure if the dal makhani taking 12 hours is the correct understanding of the op. i am guessing the chef is trying to say that the lentils are soaked for 12 hours before being cooked in 1 hour

India is heaven for vegetarians but not so much for vegans. Most of the dishes use at least some form of milk product which vegans are against.
