(Now, the theory behind that is its too toxic, why they evolved to be on land)

My theory is that only the water in the ocean or related to the ocean is dangerous for them I would assume if they got the water out of a faucet it would be safe to drink and therefore safe to touch.
The reason I think that is all living things technically need water to survive I assume that would includ inclings and octolings

nothing would happen. we see inklings hit water all the time and are perfectly fine. they use the ink to cover their bodies, with some people able to forge clothing out of it. you return to a kettle after you fall into a big body of water but otherwise you don't get hurt. its like a cat going into water, it is scary but it isn't going to kill you unless you drown

Sounds like a matter of water pressure caving in their bodies. Since they're so fragile normally it makes sense that water could crush them when in high volumes.

I think an inkling would have to have a way bigger portion of them submerged in water that just their hand for them to dissolve/get splatted

If they disolve, it's because of sudden panic, think about it: they disolve before landing if they fall from a high place, it's the same for disolving in water.
