#Realtor KayBarchetti’s Chicken Salad Supreme 3 3 Cups of cooked chicken –
simmer for 1.25 hours a plump frying or roasting chicken, 2 cut carrots, 2 cut celery, 1 cut onion, a crushed garlic clove, salt & pepper, & some parsley
The cooked & cooled chicken- remove all skin, connective tissue, and bones
You can also use a large rotisserie chicken to get 3 cups of cubed chicken; again, remove all skin, connective tissue, and bones
1 stalk Celery – this gives the chicken salad a nice light crunch. Dice the celery small.
!/3 cups thinly sliced scallions or leeks
Parsley –fresh if possible, chop small
Optional to add
¼ cup fresh sweet peppers: green, red, orange, yellow, or purple
¼ cup Radishes: red, purple, or white
Dressing for your chicken salad
• ¾ cup of Mayonnaise – (to cut calories, you can use plain yogurt)
• 1 Tablespoon of Horseradish Sauce or Dijon mustard
• 1/3 cup of dried fruit: pick (one) - cranberries, raisins, or chopped figs
• 1/3 cup fresh drained fruit: pick (one) - pineapple, figs, blueberries, or granny smith apples
• 1/3 cup nuts: pick (one) - sliced, slivered, or chopped almonds, pecans, or walnuts
• Salt & pepper to taste
The Process:
Chop your cooked chicken to bite size to get about 3 cups of chicken; add your prepped vegetables, dried fruit, fresh fruit, nuts
Mix well & separately the Mayo, salt & pepper, horseradish sauce or mustard, & parsley
Mix the Mayo mix into your salad.
I then surround the chicken salad with some of these garden delights 1. Swiss Chard, Kale, Arugula, Escarole, or Romaine 2. Cherry, Grape, or beefsteak tomatoes 3. Steamed Beets 4. Sliced Cucumbers 5. Hardboiled eggs
In the above photo, there are rows of sautéed peppers, hard-boiled eggs topped with grilled peppers, diced Kiwi, tiny tomatoes, steamed fresh beets, sliced olives, and salt & pepper. On these items around the chicken salad, I use my Greek Dressing.
My Favorite Greek Dressing:
• ½ cup extra virgin olive oil
• ¼ cup red wine vinegar
• ¼ cup lemon juice
• 2 teaspoons Dijon mustard
• 2 Large cloves of garlic minced or grated
• 2 teaspoons oregano or Italian spices
• ½ teaspoon salt
• ½ teaspoon pepper
