I think jevil would easily win, because in both the sans battle you have to consume the enemies' energies to beat them, and jevil has a lot more stamina than sans, and to survive jevil you have to use a lot of energies. This is just my personal opinion though

sans in the original undertale knows you can’t die, so he doesn’t try his hardest. therefore, sans using his full strength would be like 2.5x as strong

If I had to guess who one, I would say Jevil. Sans used up a lot of energy running from Jevil and that last attack of Gaster Blasters had to drain up what was left of his energy, I would say Sans tired out after only so long and Jevil finished him off with the giant devilsknife. If anyone else has a better theory on who won please let me know.
