And here are some helpful tips- 🧀🧀🧀
1. make sure Brie is really cold to get all the rind off
2. after cubing, let sit out so it gets to room temp before whipping
3. I used a food processor but Thomas Keller and many other recipes use a mixer with paddle attachment. You could also use a hand mixer.
4. I used 2x 8oz wheels of Brie and reserved half for another topping. You need to have enough Brie when you are whipping it to get it to a good consistency, so l would do 2-3 wheels at a time.
5. Beat or whip the cheese on medium speed until it becomes smooth and creamy, scraping down the sides as needed, about 5-10 minutes. If motor on the food processor gets hot, it will start to cook the brie, so be aware of temperature.
6. topping options are endless, l used a honey comb, a drizzle of more honey and rosemary here but will post another idea soon.
