Homemade Blueberry Muffins!! How to Make Fruit Muffins from Scratch

Made these this morning. So superior to my box mix that I’ve used for year because I though they must be too hard to make. Thank you for this. I’ll try some of your other recipes later this week.

RECIPE IN GRAMS & CUPS:

- 1 3/4 cup plain flour, 230g
- 3/4 cup sugar, 150g
- 1/2 tsp salt
- 2 tsp baking powder, 8g (but for such a small amount I recommend using the tsp measurement)
- 6 tbsp oil, 90g or 90ml
- 1 large beaten egg
- 1/2 cup milk (room temp - I just microwave it until a bit warm)
- 1 1/2 tsp white vinegar (or any kind of vinegar or acid like lemon juice)
- 1 cup blueberries, <150g
- 1 tsp vanilla, 5ml or 5g

I was just thinking about blueberry muffins but I didn't want to buy an instant pack because the fake berries taste terrible. This will be great for my brother and me!

I followed the recipe but my dough turned out too liquid
I had to add more flour
Muffins raised unevenly and tops got slightly burned
Too much sugar to my taste

Made today and followed recipe e cept used lemon juice instead of vinegar...I also used swerve sweetener instead of regular sugar....they were beautiful but tasted very bitter....I really wanted them to be good....any suggestions

210g of flour and 150g of sugar in case anyone was wondering. They were perfect! Has anyone tried switching for other types of berries?

Wow, he gave some helpful tips that the other channels I've come across for this recipe don't give you. I knew about the buttermilk and the coating the blueberries but never thought to just let the batter set for a while. Which is weird because I've done that with brownie mix and it gets a crispier top to the brownies if you let it set before putting it in the oven. Same with cornbread mix.
