Since I live in a country where we do not have gas burners but only "hot plate" (not to be confused with induction), how should I approach the heating of both sides of the chapati properly?

ОтветитьDidn't explain properly at all... One side to be just made dry and then flip it and when bubbles start appearing, show the down side to the gas flame.. Or to be more precise, the side which was dried initially... This is v. v. Important.

While starting to knead the dough don’t we need oil?
I tried to knead as you suggested but the dough becomes very sticky and messy.

ОтветитьAdd 2 tbsp milk along with water while kneading the dough. Once you do that, use a towel to gently press the chapati.. it will bubble up to phulka instantly. You can avoid the burner totally which can clog up with the burnt atta.
ОтветитьBad idea to roast roti directly on fire gas and better use old school way without non stick pan or tava. Its all chemical and Harmful. Stay healthy.
