I’m 50 years old and I remember when I was about 8 my mom used to make this drink but fermented without the sugar she would ferment only like for two days and would add the sugar after to taste. By the way this it’s very typical drink in the Dominican Republic but only with water. mom also made it with a fruit called Jagua not sure what it’s called in other countries. It was so delicious

ОтветитьI ferment it then back sweeten with pineapple concentrate and some water and salt and honey. Then keg it. It’s so good.

ОтветитьGot a slight redness on top of the foam in mine. I kept a cheese cloth over it and it took almost 2 weeks to get the foam. I’m one. A old town and the heater is typically sale to70 degrees in my house. I didn’t rinse the cinnamon like some people suggest. I was told it could be from that. It smells sweet, no moldy smells at all. Would you suggest I toss it and start over?
ОтветитьI made this last year and came out great. I’m trying it again this year and it came out too syrupy 🤔 I ended up throwing it away , not sure what happened.

My Abuelito used to make Tepache, he would give us kids a little cup, he would say it was good for the tummy, and thanks for suggesting the towel over the bottle in case it explodes, now I won’t be as scared 😄🤗
How warm is it where you live normally? I did the secondary fermentation for around 3 days and still hardly have any fizzz

ОтветитьI made it but it did not have so much carbonation like yours did. I made it and kept in mason jars with a regular lid. It did taste amazing. On my 2nd bath now and it’s been 4 days and I see even less fizz at the top. Could it be I didn’t put enough sugar? I’m using 2 quart jars and added 1/8 cup, if a small home grown pineapple

ОтветитьI'd like to share an idea for the bottles. This was shared to me and has so far been fool proof.
1. Fool the flip top bottles as usual and cap the bottle but don't completely seal with the metal clip.
2. Use light rubber bands to good the metal clip lightly closed this allows has to escape while keeping CO2 out of the ferment.
3. Once you are ready to stick in the fridge, close the bottles and stick in the fridge!
Note: during the counter fermentation you are welcome to stick the bottles in some kind of vessel to capture overflow, but it should be minimal since the gas is being released evenly.
Omg Im so glad I found you guys! I just made kombucha and tepache follows your videos. Second days today and it smells so good in the house already! I actually trying two different jars for tepache, 1 with the pineapple fruit, the other with just the peel and core. They all tastes so good after just 2 days. Thank you so much for your efforts to make all the wonderful videos. Just wanna let you know your videos are the BEST!

ОтветитьI made some fermented pineapple wine which is still fermenting I decided to taste it and it almost knocked me to the floor and all I did was dipped my spoon into the drink and I had to go sit down

ОтветитьI love that idea! I wish I had pineapples in my garden. Unfortunately, I only have access to the ones from the supermarket that are of course heavily sprayed. I know you need the bacteria on the skin for fermentation so not sure if it will work if I wash it with eg. baking soda and vinegar. I'm in TN and we have fairly warm and humid weather for many months of the year so I might be able to even grow my own. how long does it take in FL climate to grow a pineapple?
ОтветитьLost a lot of credibility with me when they (oh my god) WASHED the pineapple. All the bacteria and yeast you need to start the ferment are on the outside.
ОтветитьIf you're a newbie, opening outside is probably best. My first attempt at making Tepache, I tried to open the bottle slowly thinking it will be pretty fizzy and all of the liquid inside shot up and out. It went all over everything in a 3'-4' radius - the windows, walls, cupboards, ceiling, floor, etc.. It was a huge mess and there was only about an inch of Tepache left in the bottle. Great video! You two always look like you're having fun!

ОтветитьSo from what I understand, to get it more carbonated you need to ferment longer. But if you ferment longer, it loses its sweetness... If you wanted it slightly sweeter but also more heavily carbonated could you add sugar during 2nd fermentation (when you transferred to bottles in this video) ? Or maybe I am overthinking and you just add at the end if desired.
