Shiitake Mushroom Table Top Farm Set Up

I'm growing one of your kids, but the block is actually rising unevenly as mushrooms attempt to grow from the bottom and push the block up. Was I an idiot and flipped the block upside down on accident or is this normal?

My block is heavily contaminated with at least 3 different types of fungus, possibly an Aspergillus, a Zygomycetes, and something very white. Will this be problematic for the shiitakes?
