The chefs energy is so nice he has an intensity to him that you know he is full of passion but it’s not overly intense that it bleeds into the kitchen and makes everyone feel like they are unable to make mistakes. Seems like he is extremely valuable to the operation.

His food looks impressive and perfect but no one in Italy cooks like that, and the poor people of Italy could not afford to find the products he uses for his incredible food. Everyone should read Alberto Grandi's masterpiece book about Italian food, Denominazione di origine inventata (Invented Designation of Origin). Stefano should talk about how incredible and artistic he is because no one cooks the way he does.

I actually dined there and it was nice but okay, my ravioli wasn't aldente unfortunately and yeah I was looking forward to it. Dessert was good in a weird way, I think they spackled pepper on my ice cream, idk why
