If you don't have self-rising GF flour, like i didn't, add a tablespoon of baking powder. Helps make the pancakes rise.

1 egg
1c milk
1c gluten free flour (self raising)
pinch of salt

He forgot to mention Maple syrup game over. Definitely not Canadian.

Pancakes always need syrup ..... Or at least some cream...that compote looks bland.... Very odd toppings
