Warays have their own version of pinangat. I just love my father's version. My brother-in-law law who is from Laguna makes superb ginataan dishes. But tinuktok from Bicol cannot be denied its place on our table. It's just too difficult to get some since we're not in Bicol. I wouldn't anymore try to make it from scratch. I just wish it is easier to find and get hold of. Some of the few that I tried aren't really that good. And they were bought in Bicol (just forgot where exactly in Bicol). Haaayy.... Like any dish I guess, sometimes, it really depends on who cooks it. I first had a taste of tinuktok when a company driver brought some to share sa office. Apparently, homemade. That was such a divine gustatory experience.

Interesting to say the least…the recipe of cooking laing by one of the chefs here in this episode. The way my late mom and her family in Albay cook laing is without stirfrying any ingredients at all.

finally someone explained that there are stages in the life of a coconut. that each stage has different use in our daily use in our dishes. I have been living in Rizal for about a decade now but my week does not pass without dishes with gata and if not sili. Savory and spicy! how was that for a Bikolano/Bikolana. Bicolanos put gata in almost all its cuisine. My mom put coonut in dinuguan, in caldereta, even in kare kare.

Next time you visit Naga, you should try the famous Kinalas, a traditional Filipino dish originating from the Bicol area. It's made with a combination of noodles, spices, pork or beef brains, and scraped meat from pork or beef head. You will find it in Dayangdang. I can recommend two (2) stores -Cha Kamot, considering its long established name, and Mang Kok's, which is a lot better in terms of taste and kinda level up in terms of variety of ingredients.

Thank you for this! ❤ from a Sorsoganon.. also, I have a theory that the use of coconut became predominant in Bicol because of a larger group of Indians inhabited this region in ancient times.. it's primarily vegetarian and spiciness, with just tweaks for the seafood we have in the region, and other meat for the local palette.. you will recognise the Indian genes on most Bicolanos

The traditional Pinangat (it actually reminded me of lasagna but in a leafy version😂) and Laing that has this drier texture..makes me hungry. Its the best I've eaten in Bicol.

Tinoktok and pinangat is very different, tinoktok is pretty much the pinangat in rinconada area.. Iriga City, Baao, Buhi, Nabua.. tinoktok is 1 of our authentic delicacies ..and Inolas (Dinuguan) have a natok (Gata) in it..
