Follow-up:

It's been four days since I had the cold rice. I'm still feeling mild inflammation in both knees and my right elbow. I don't know if this is purely due to that last glucose spiking bowl of rice or a cumulative effect from all four bowls over the course of a week. What I will say is, if you choose to test out resistant starch/rice for yourself, be mindful not only of your blood glucose and ketone readings, but also if you experience inflammation.

Also, prior to switching testing units, I did a side by side test of the two (it was my last BG test strip for the old unit so I had to switch monitors). Blood glucose was 3 points different and blood ketones was .1 point different. So, I would argue that there is no significant difference.

Black rice has a low GI of 42.3 and minimum effect on blood glucose levels due to its high fiber and magnesium levels. Still, it is a carb/protein so you get the calories.

I'm curious to know if you washed the rice ? That would remove a lot of starch off the rice and did you use a pro rice cooker ?

I am 75, as long as I eat Turmeric everyday, I have no joint discomfort...at all. If I stop eating Turmeric, within one week, I will get inflammation in my joints. I try to never miss a day. I just grind up the actual root in my morning smoothies. I feel great...no meds and no health problems

In Japan we have cold rice frequently in the form of "onigiri". BUT, it needs to be said, diabetes II is on the increase. Often unobserved because Japanese people don't seem to develop the same degree of big belly and they "push through" physical discomfort. A guy who worked on my house lost a foot the same day he learned that he had diabetes.

My MIL uses par boiled. I wonder of that makes a difference. Im puerto rican and we eat lots of white rice. I recently went on carnivore which has been a game changer. But i enjoy foods in my culture so i want to find alternatives that allow me to have some rice every now and again. I dont have diabetes but i do have pcos and i assume that i suffered from hyperinsulinimia although never tested for it. Any thoughts?

Thanks for this very interesting video. An alternative hypothesis to explain why the cold rice spiked your blood glucose more than all the other ones is that by chewing it for longer, you infused it with more amylase-containing saliva and, therefore, digested more of the starch or digested it faster. To figure out whether the chewing or the lack of fat had the biggest impact, I guess you could try a bowl of cold rice with butter... although that doesn't sound very appetizing!

One preparation I did not see tested is fried rice. Fry uncooked rice in oil until brown and then hydrate the rice.

I think it’s the vacuum Packing not allowing g the rice to breakdown with the exposure to oxygen…. Just a theory.

This video is now 3 years old so I don't know if your keto mojo testing device has the capability of measuring GKI (glucose ketone index) but if it does please include that figure with your results. Professor Thomas Seyfried pioneered that measurement and had it implemented on Keto-Mojo devices but I'm not sure exactly when that happened. Thank you for your efforts.

What I thought was that you're supposed to let the carbohydrates cool for twelve hours or more. Then reheat and eat. What are you doing? The study you linked said nothing about 12 hours or more.

Love your videos... Thank you for being the tester... I have done my own tests with the rice because I love some rice with butter and stir fry.. If I can have a cup of rice once or twice a week... I'm good... I love potatoes too but I'm afraid they are a no go on Keto...

Well, the people in Southeast Asia eat rice two to three times everyday and not as many people with diabetes as Americans. Your test not physically reflect the scientific data just because your body reacts to new foods you absorb to your body.

Hey there Steve! Hope you’re doing well! Don’t know how I missed this series the first time around! I think my blood sugar and anxiety spiked for you when I saw you eat the fresh rice 😮. Was interesting to hear how the rice affected you so negatively- really shows how in tune we become once we move to a low carb lifestyle. This is actually a great experiment, thank you so much for doing it!

I wonder if other more complex carbohydrates, like some beans, maybe quinoa and fruits like green bananas (or any low GI carb) could have had a more potentiated effect (a reduced spike). I'm doing a type of low carb diet right now and trying to go for carbs that do not spike glucose so much. I'll try to make the experiment too. Great channel, warm regard!

I eat rice cooked with a dab of vegetable oil. It would be nice if you'd check the result of that. As a diabetic (A1C=7) I have inflammation of the hand and joints and it never occurred to me that it may have come from what I'd just eaten. Would you talk more on that subject of foods that inflame.
