This man is the Charlie Daniels of the fillet knife, he is the only man that does my fish ! ! He did all my fish the past few days and is definitely a wealth of knowledge ! Come to Frankfort and see this man in action

Just met this guy at a fillet station off the water. Very humble guy. Would have loved to see his skills in person. Told me to look up this video and wow.

Much better than me at fileting, but it looks like they never bled the fish immediately after catching. Seems like a lot of blood in the meat.

So much waste on the spine after filleted, so much meat left on skin , and so much blood and guts all over meat ... At least gut, and rinse blood out before filleting , imagine must be for every 20 salmon processed a whole one is wasted , ouf .

No question he is fast, fast, FAST, but SOOO much good meat goes in the trash. If you get paid by the fish, I guess it's better to be fast than good.

I’ve worked in Seafood industry here in Washington since I was a kid the I’m 100% sure the Filipino filleters would be talking shit about the wasted bellies and meat. The bellies are the most fattiest part of the fillets and they went into the trash. You should know that
